Nicoise Salad

Niscois Salad is a favourite, a quick and easy peasy for a summer meal.Steamed green beans and baby potatoes.

Soft boiled eggs cut in half.

A tin of Sirena tuna.

Summer ripe tomatoes, and Kalamata olives,

Dress with good olive oil, sea salt, ground black pepper, a splash of white balsamic vinegar or squeeze of lemon juice and torn fresh Italian parsley.

Combine and serve with crusty baguette.
